A Scandi makeover has transformed this 19th-century manse, overlooking the Kyle of Tongue, into an environmentally aware boutique hotel with the feel of a design and art enthusiast’s home. Bedrooms have soft paint finishes, earthy tones, bare floorboards. Lofty studio rooms in former stables have exposed brick, heated polished concrete floors, big windows onto a courtyard and fire pit. In a dining room adorned with work by botanical artist Claire Basler, a set menu of dishes such as beef tartare with beetroot, barbecued mackerel with homegrown vegetables, and spruce parfait with apple sorrel sorbet is exquisitely presented on bespoke pottery. Picnics are provided, and on hot days you can take a dip in the stream-fed nymph pool.
