Beneath Slieve Foy mountain, stepping distance from the sea and within walled gardens, the Carroll family’s Georgian house affords sea or mountain views at every turn. The hotel is filled with family photographs and heirlooms, fresh flowers and squashy sofas. Traditionally decorated bedrooms, sprinkled with antiques, have home-made biscuits to go with those views; most have a roll-top bath and a power shower in a modern bathroom. After a walk up the hills or along the seashore, return to a fire in the drawing room. In the elegant dining room, modern Irish dishes make the most of local produce, and include Carlingford mussels and Mourne mountain beef. At breakfast, there are home-made jams and marmalades.
