An 11th-century fortified castle at the top of a medieval village in the hills south of Draguinon has been turned into this small hotel where, say the nominators, ‘everything was correct’. The best bedrooms, in the main building, have a four-poster bed and view of the village or countryside. ‘Ours, outside the gate, was fairly basic. All dining facilities are below courtyard level. You eat on the terrace (spectacular view) or behind a glazed cover. In really cold weather you go into an interesting labyrinth [where a wood fire burns]. The meal was excellent, with impeccable service.’ Max Callégari, the chef, serves seasonal dishes. The hotel also has a self-catering apartment.
