In a remote spot above the Aveyron gorges, this well-preserved bastide village (population 250) was founded in the 13th century below a hilltop fortress, now a ruin. In the square is this “extremely well-run” Logis de France, owned by chef Rémy Simon. He wins a Michelin Bib Gourmand for, eg, pavé de veau du Bas Rouergue; l”astet najacois et aligot de Laguiole. His cooking is “nothing short of excellent”, wrote one correspondent, who also praised the wines, service and “exceptional value for money”. “The no-choice pension menu is interestingly varied from day to day, and the food is presented with great artistry,” says another. The restaurant, with rustic decor, is “filled with locals”, and you can dine out on the terrace. The breakfast (not a buffet) is also enjoyed. It includes home-made jams, yogurt, “very good bread”. Bedrooms are “simple but comfortable”. “Ours had a good view over the garden.”
